Making "soft" cheese really is so easy. It is a fun activity to do with kids.

2 cups milk
4 teaspoons vinegar
salt to taste

Bring the milk to a boil while stirring constantly. Once it starts to boil turn off burner but keep the pan on the burner. Add the vinegar and stir well.(it should start to curdle) Then leave it alone for 10 minutes. Now it is time to strain it. Use cheesecloth spread over a bowl. Pour the curds and whey over the cheesecloth. At this point there are 2 different ways you can approach the next step. You can either squeeze the curds in the cheese cloth and press out as much moisture as you can, or you can tie a string around the cheese cloth and hang it from a wooden spoon over the bowl for 30 min. If you squeeze the whey out like I did last night, it is kind of crumbly like feta and not as spreadable. It would be good sprinkled on a salad, or it did ok being spread on the bread. I am going to try the other way today. I added basil and oregano to mine and it was so good. You can add whatever you like. The cheese itself is very mild. I was surprised that it didn't taste like vinegar at all. Oh, and I presses it into a measuring cup to mold it.Good luck!
